Figs Atop a Cloud

  • 10 to 12 dried figs
  • 1 cup brown sugar
  • 1 cinnamon stick
    6oz mascarpone cheese
  • 3 1/4 cups Legacy Vieux Chateau du Roi
  • Peel of 1 lemon
  • 1/2 a vanilla pod
  • Icing Sugar, option

Preparation:

Remove stem from the figs and cut them in half. Place fig halves in a large pot and add the wine, brown sugar, lemon peel, cinnamon sticks and vanilla pod. Simmer everything for about 20 minutes or until the liquid has reduced by half. Remove from heat and allow cooling. In shallow desserts bowls place a fair size dollop of mascarpone on the bottom, and then place fig on top. Drizzle with the liquid reduction and if you wish you can sprinkle icing sugar on top. Elegance, romance and decadence all rolled into one!
